Roasted Broccoli Parmesan Recipe Share


ROASTED BROCCOLI PARMESAN

INGREDIENTS:

  • 1 medium bunch (about 20 oz) broccoli with stems
  • 6 cloves garlic, peeled and smashed
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1 cup homemade or jarred marinara sauce  
  • 1/2 cup shredded mozzarella cheese

DIRECTIONS:

  • Preheat oven to 450°F. 
  • Trim about 1 inch off broccoli stems and discard. Slice the broccoli stalks in half lengthwise to have 4 pieces total. 
  • Place the broccoli and the garlic cloves on a 9-by-13-inch baking pan and drizzle both sides of the broccoli florets and stems with olive oil. Season both sides with salt and roast cut side up about 10 minutes, until the broccoli is browned on the bottom. Turn the broccoli and garlic and roast an additional 10 minutes until tender and browned and crisp.
  • Top with marinara sauce and mozzarella. Return to the oven and bake until hot and the cheese is melted, about 10 minutes.

Turkey Chili Taco Soup: Skinny Taste Recipe Share

It CERTAINLY isn't the weather down here in FL making me feel like fall has arrived.. you know, being that it's still 90+ degrees outside.

But something in the air {my air at least} has definitely changed. And well, the pumpkin candles are burning & my autumn wreath is on the front door!

So I might have to put my hair up and wear a bathing suit while I cook/eat this until things finally cool down around, but it's TIME to break out the FALL chili recipes again.

Chili is literally one of my FAVORITE meals to make ahead for prepped meals & even to freeze for later! Am I right, ladies??

Y'all have got to try this simple, healthy chili-type recipe from Skinny Taste!

Turkey Chili Taco Soup

INGREDIENTS:
cooking spray
1.3 lbs 99% lean ground turkey
1 medium onion, chopped
1 bell pepper, chopped
10 oz can rotel tomatoes with green chilies
15 oz canned or frozen corn, drained
15 oz no salt added kidney beans, drained
8 oz tomato sauce
16 oz fat free refried beans
1 packet low-sodium taco seasoning
2 1/2 cups less-sodium chicken broth


DIRECTIONS:
-Spray a large pot with cooking spray then brown the turkey over medium heat, breaking up with a wooden spoon as it cooks. When cooked through, add the onions and pepper and cook 2-3 minutes.
-Add tomatoes, corn, beans, tomato sauce, re-fried beans, taco seasoning and chicken broth. Bring to a boil, cover and simmer about 10-15 minutes.
-Serve with your favorite toppings such as low fat sour cream, jalapeƱos, reduced fat cheese, chopped scallions, onions, or chopped fresh cilantro. Freeze leftovers in individual portions for future meals.
