Even when I started coaching, I had no clue how I was going to make things happen or figure out what I was doing.

But God put that opportunity before me & when I accepted it then surrendered it to Him as ministry + how I was choosing to support my family.. He's provided so many outlets for me to GROW.

Reason #9,351 why God is faithful.
He equips.

Follow His call, ready or not.
He'll open doors for you to grow.



Wellness, A Matter of the Heart: Another Throwback Thursday


This girl sure looks a lot different now.

Her priorities, attitude & even body.

Time is always a factor when it comes to these kinds of transformations, but my relationship with food/alcohol, my spouse & the Lord have been the biggest game changers for me as a person. 

A few years ago, I was living for the moment...Doing what "felt" good.Living with the wrong priorities.Not treating my husband like the spiritual leader I trusted he'd become one day.Coasting thru my job at work because it was familiar.Sinning because I knew God's grace was abundant.Was I a great gal? Sure!Was I my personal best as a woman & honoring Jesus daily? No.

Today..I try to live & make decisions in light of eternity.. aiming to please Jesus before myself.Making God a priority first, then my family.Honoring who I know Nate can be no matter his short-comings.Pursuing personal growth even when it's uncomfortable.Praying to be broken over my sin the way God is.Giving myself grace as an imperfect woman, but striving to be more like Jesus.

I tried off and on for YEARS to become "healthy".. aka be "skinny" (which wasn't actually a healthy goal at all) at whatever the cost. And the reason I was never successful was because I wasn't doing it for the right reasons. Failed attempt after failed attempt - it came down to a matter of the heart.

When I decided to begin this journey of wellness 2 years ago to become healthier - mind, body & spirit - I was coming to the realization that I needed to make changes because my health was bigger than just me. I needed to do it to be a better wife & woman of God. Of course, I still has physical goals that I wanted to achieve, but I was starting to understand the responsibility that my health truly was & what all I was lacking.As I've been chipping away at my goals & renewing my mindset the past several months.. theres a set of verses that keep presenting themselves to me.

1 Corinthians 6:19-20

Do you not know that your bodies are temples of the Holy Spirit, who is in you, whom you have received from God? You are not your own; you were bought at a price. Therefore honor God with your bodies.

Wellness is a sign of obedience to God.It's also a sign of respect because the Holy Spirit dwells within us.And when we take care of ourselves, we are better equipped to love & serve those around us.
Transformations are so much more than just our bodies.. but even that aspect of our wellness is IMPORTANT.

Take some time to evaluate your heart & make the mental shifts you need to, in order to change your motives. I bet you'll even begin to stick with your daily disciplines more because there's a greater purpose behind it.

#ThrowBackThursday is looking a bit different this week. But I pray that it's going to meet someone at a time of need.

I never imagined that being a wellness coach would give me this opportunity for ministry, but it has. And I'm SO incredibly grateful.

Thank you, Jesus.. for allowing me to turn my mess into a message of your faithfulness, love, forgiveness & promises!

Spaghetti Squash Pad Thai Recipe SHARE

Need a low-carb healthy recipe to add to your lunch or dinner menu this week?


Pad Thai with Spaghetti Squash

Ingredients:

1 medium spaghetti squash (about 3 lbs.)
2 Tbsp. tamarind paste (or rice wine vinegar)
2 Tbsp. fish sauce
1 tsp. raw honey
2 to 4 Tbsp. water
12 oz. extra-firm tofu, cut into small cubes
3 Tbsp. cornstarch (preferably GMO free)
8 tsp. peanut oil, divided use
1 medium onion, thinly sliced
2 large eggs, lightly beaten
4 cloves garlic, finely chopped
¾ cup fresh bean sprouts
4 medium green onions, cut into 1-inch pieces
2 Tbsp. chopped peanuts
Lime wedges
Cilantro sprigs
Crushed red pepper


Instructions:

-Preheat oven to 350° F.
-Place squash on a parchment lined baking sheet. Poke squash 2 or 3 times with a fork. Bake for 60 to 80 minutes. Cool for 20 to 30 minutes. Cut squash in half lengthwise. Remove seeds. Scrape flesh into stringy noodles. Set aside.
-To make sauce, heat tamarind paste, fish sauce, honey and water in a small saucepan over medium heat. Cook, stirring constantly, for 1 to 2 minutes. Add additional water is sauce is too tart. Set aside.
-Coat tofu in cornstarch in a small bowl; mix well.
-Heat a large wok (or skillet) over high heat.
-Add 2 tsp. oil, swirling to cover surface of pan. Add tofu; cook, stirring constantly, for 2 to 3 minutes, or until all sides of tofu are brown. Remove tofu from pan and place on a large plate. Set aside.
-Add 2 tsp. oil to pan; cook, over high heat, swirling to cover surface of pan. Add onions; cook, stirring constantly, for 3 to 4 minutes, or until onion are light golden brown. Remove from pan; place on plate with tofu. Set aside.
-Add 2 tsp. oil to pan; cook, over high heat, swirling to cover surface of pan. Add eggs; cook over medium heat. Do not stir. As eggs set, lift edges, letting uncooked portion flow underneath, creating a very thin omelet. When eggs are set, cut them with your spatula. Remove eggs from pan and place on plate with tofu and onions. Set aside.
-Add remaining 2 tsp. oil to pan, swirling to cover surface of pan.
-Add garlic; cook, over medium-high heat, for 1 minute.
-Add spaghetti squash, spreading squash into a single layer; cook for 30 second, stir and make another single layer. Repeat this 3 to 6 times, cooking for about 3 to 4 minutes, or until squash is warm and golden brown.
-Add sauce; mix well.
-Add bean sprouts and green onions; mix well.
-Add tofu mixture; cook, stirring frequently, for 1 to 2 minutes, or until well mixed and heated through.
-Transfer to a large serving platter. Top with peanuts, lime wedges, cilantro, and crushed red pepper. Serve immediately.


Tips:
If you can’t find tamarind paste you can substitute rice wine vinegar.
Thai fish sauce is Nam Pla, but you can use another kind if you have it.

BBQ Chicken Baked Sweet Potatoes Recipe

How about this quick, easy to prep ahead recipe that works for a packed lunch or family dinner? This healthy, flavorful recipe is available amongst many others on the Beachbody Blog.
Putting this recipe on my meal planner this week!
Ingredients:
2 small sweet potatoes, washed, pierced with fork
1½ c. shredded cooked chicken breast, boneless, skinless
¼ c. barbecue sauce, reduced-sugar
¼ c. Quick Pickled Red Onions (or 2 Tbsp. chopped red onions)
1 Tbsp. chopped fresh parsley or cilantro (for garnish)
Instructions:
Preheat oven to 400° F.
Place sweet potatoes on a baking sheet. Pierce each sweet potato 3 to 4 times with a fork. Bake for 35 to 45 minutes, or until tender.
While sweet potato is baking, combine chicken and barbecue sauce in a small bowl; mix well. Set aside.
Cut sweet potatoes in half lengthwise.
Top sweet potatoes evenly Quick Pickled Red Onions and chicken mixture. Sprinkle evenly with parsley; serve immediately.
Tips:
Look for barbecue sauce that has an ingredient list that does not contain artificial sweeteners, additives, or preservatives. There are many brands on the market that are sweetened with small amounts of honey, maple syrup, or molasses.
Use Healthy Barbecue Sauce as a homemade alternative to store-bought barbecue sauce.
