I wasn't at my "goal" body or health status.
I wasn't necessarily miserable.

But I WAS stuck
And I knew I wanted MORE.
So I became a coach.

I longed to alleviate stress.
I desired to be appreciated.
I wanted to travel.
I ached for community.
I craved freedom.

And two years later, I've experienced all of that.

I'm a {nearly} 26 year old entrepreneur who doesn't have it all figured out, but has embraced failing forward.

I have what I need to create & maintain a life by design.

I've joined & begun to create a TRIBE that fills my heart.

I get to use my gifts for ministry & to make a difference.

I get to connect my passions & purpose to this business.

And.. I get to pay all of this FORWARD.

Turkey Chili Taco Soup: Skinny Taste Recipe Share

Today's recipe share is coming to you from SKINNY TASTE. If you haven't check that blog out before, go ahead and take a detour. That blog is SUCH an awesome resource for diverse simple & healthy recipes that are 21 Day Fix Approve, Gluten Free, etc.




It CERTAINLY isn't the weather down here in FL making me feel like fall has arrived.. you know, being that it's still 90+ degrees outside.

But something in the air {my air at least} has definitely changed. And well, the pumpkin candles are burning & my autumn wreath is on the front door!

So I might have to put my hair up and wear a bathing suit while I cook/eat this until things finally cool down around, but it's TIME to break out the FALL chili recipes again.

Chili is literally one of my FAVORITE meals to make ahead for prepped meals & even to freeze for later! Am I right, ladies??

Y'all have got to try this simple, healthy chili-type recipe from Skinny Taste!

Turkey Chili Taco Soup

INGREDIENTS:
cooking spray
1.3 lbs 99% lean ground turkey
1 medium onion, chopped
1 bell pepper, chopped
10 oz can rotel tomatoes with green chilies
15 oz canned or frozen corn, drained
15 oz no salt added kidney beans, drained
8 oz tomato sauce
16 oz fat free refried beans
1 packet low-sodium taco seasoning
2 1/2 cups less-sodium chicken broth


DIRECTIONS:
-Spray a large pot with cooking spray then brown the turkey over medium heat, breaking up with a wooden spoon as it cooks. When cooked through, add the onions and pepper and cook 2-3 minutes.
-Add tomatoes, corn, beans, tomato sauce, re-fried beans, taco seasoning and chicken broth. Bring to a boil, cover and simmer about 10-15 minutes.
-Serve with your favorite toppings such as low fat sour cream, jalapeños, reduced fat cheese, chopped scallions, onions, or chopped fresh cilantro. Freeze leftovers in individual portions for future meals.

Digging that Girl in the Mirror


I might not always feel like I'm moving forward physically when I look at the numbers of my body, but I remind myself (1) how far I've come (2) that I'm in this journey for the long haul.

I remember two years ago, absolutely DREADING trying on clothes.

The discouraging feeling of standing in fluorescent lights and mirrors on all sides.

When nothing fit.

But moreso..

When I felt ashamed of letting myself go, but just didn't know how to start back at taking care of myself & actually stick with it.

A lot has changed since then.

I'm not running a race or striving for perfection.

I still slip up with my routine, miss workouts here and there + love cheeseburgers.

But I've learned to give myself grace & continue to simply give my daily best.

And that's meant the world.. For my mind & body.

I'm not necessarily where I want to be. But I'm proud of where I am.

I'm a strong, healthy woman on a continual mission to love myself & care for my temple.

That's what I see in the mirror now. And I dig it👌
