Between then & now, I've become a better woman, friend, daughter, sister & wife.

Nate is a better man, leader, son, brother & husband.

As a couple were better listeners, forgivers, servants, friends, lovers & partners.

And God gets all the glory.

Fudgy Flourless Black Bean Brownie Bites

Found this recipe via good ole PINTEREST today & decided they were definitely share worthy!

"No joke, these brownie bites taste as good as they look. I'm forever trying to find recipes like this; recipes that taste great, are simple to make, pack easily in lunchboxes, can be served to guests because they don't taste weird, and that are grain and refined-sugar free."

Ingredients
  • 1-3/4 cups cooked black beans, drained
  • ⅓ cup coconut oil or butter, melted
  • ¾ cup cocoa powder
  • ½ teaspoon sea salt, ⅛ if your beans were salted
  • ½ cup honey
  • 2 teaspoons vanilla extract
  • 3 eggs
  • ½ cup crispy pecans {optional}
Directions
Preheat oven to 350* F.
In a food processor, blend beans, melted coconut oil or butter, and honey until beans are smooth.
Add in cocoa powder, sea salt, and vanilla, and puree until mixed in.
Add eggs and pulse to mix.
Finally, add in crispy pecans and pulse to chop and mix in.
Line a 8x8 or 8x10-inch pan with parchment paper and pour in batter.
Bake for 30-35 minutes, or until top starts to crack and brownies are set and not runny when you push down gently in the center.
Allow to cool, then cut into bite-sized pieces. Serve with sliced strawberries.
Store in the fridge, these are best at room temperature or chilled, making them ideal to pack in lunch boxes!
Yield: 16 bites

22 Minute Hard Corps: Test Group & Hell Week GRADUATE

To say the feeling is surreal doesn't seem to totally capture this moment.. I literally just finished my final hell week workout (3rd of the day) during my 9 week journey through 22 Minute Hard Corps & I've got to get a little reflective for a moment, y'all.

.
A little over 9 weeks ago, I was 1 of about 40 men and women (out of 400,000) selected to be a part of an official test group & complete this program before it launched. Opening that initial invitation email, I was COMPLETELY overwhelmed with gratitude for being CONSIDERED and then GIVEN this opportunity..


.
I mean, talk about a once in a lifetime sort of opportunity, right?!? To be challenged to do my absolute BEST every day, to document my experience truthfully & offer feedback. To ultimately get RESULTS that will INSPIRE someone to potentially change their life. Gosh... It's been a PRIVILEGE that I haven't taken lightly for a MOMENT. 

.
So here I am, 9 weeks later. The gap between then & now has been filled with sweat, determination, many struggles & accomplishment. I can say that ‪#‎22hardcorps‬ not only made me lighter and leaner physically, but stronger and more dedicated mentally! I'm so PROUD of my efforts & EXCITED to use my knowledge and experience to better serve the women, present & future, in my Gracefully Balanced community.

Here's to Tony Horton for being an AMAZING trainer. And here's to the rest of my amazing test group for being an amazing system of support, motivation & friendship.
